400 | g | pumpkin, finely diced |
125 | ml | water |
1 | pinch | ground nutmeg |
1 | pinch | ground cloves |
1 | tsp | ground cinnamon |
25 | g | brown sugar |
1 | tsp | salt |
200 | g | flour |
350 | ml | milk |
2 | tsp | baking powder |
Combine pumpkin, water, spices, sugar, and salt in a small pot, and cook on med-high heat. Stir regularly, and add more water if necessary. Once the pumpkin is soft and mushy, take the pot off the heat. With a heavy whisk, beat the mixture until you get a fairly homogeneous puree.
Transfer the mixture into a large bowl. Add flour and baking powder and mix thoroughly. Gradually add the milk and mix in between.
Bake in a pan in a bit of fat or oil on medium heat. Serve immediately with maple syrup or jam.
